I have tried a number of burrito recipes, but this one continues to be the favorite. You only need five ingredients, and can adjust the amount of ingredients to the number of people you plan to serve.
1 1/2 lb. ground beef
one 8-ounce package of shredded cheese (I prefer Monterey Jack, but you can use your favorite)
one 15.5-ounce jar Tostito's chunky medium salsa
one can plain refried beans
large-sized flour tortillas (I've not yet been successful at making my own tortillas, so I use the kind shown in the picture)
How to prepare:
Cook the ground beef thoroughly in a large frying pan on medium heat until it is nicely browned. Drain away all the grease, and place the pan back on the stove.
Add the cheese, and mix carefully until it is completely melted.
Add the salsa and refried beans. Mix thoroughly. Allow the entire mixture to heat for a couple of minutes.
Place a couple of tablespoons of the mixture in the center of a heated tortilla. Fold it together, and serve.
As an alternative, you can use either chicken or shredded beef instead of the ground beef.
If you are serving a number of people, you can also prepare the burritos and then heat them individually in the microwave. This way, they will all be hot when they reach the table.
This basic burrito recipe makes a great lunch, dinner, or a snack while watching television.
If you have any leftover mixture, it can easily be reheated the next day.
