Meatloaf

I love this meatloaf recipe and it is very simple to make.

I grew up hating meatloaf. I don’t know if it was because my mother made it poorly or if it was because I just didn’t like it. What I remember as a child is eating meatloaf that was mushy. That to me still sounds disgusting. I have worked over the years to come up with a meatloaf recipe that I like, and I have finally found it. I even made this for my husband and although he hates meatloaf, he loves this recipe.

Here are the ingredients I use:

  • 1 egg
  • ½ c. milk, or more
  • 2/3 c. crushed crackers
  • ½ c. chopped onion
  • 1 tsp. salt
  • Pepper
  • Crushed red pepper
  • 3 T. ketchup
  • 1 ½ lbs. lean ground beef

The first step to making this meatloaf is to crack the egg into a bowl and add the milk. Mix these two ingredients together well. Add the crushed crackers next and the onions, ketchup and spices. Add enough cracker crumbs to make the mixture thick. You do not want it runny at all. Finally, add the ground beef. Mix these things together really well and then divide the mixture into four small balls.

Form each ball into a small loaf shape and place on a cookie sheet that is covered with foil. Bake at 350 degrees for about one hour or until cooked all the way through. Because my husband and I don’t like ketchup on the meatloaf, I pour mushroom gravy over the small loaves. You can buy cans of this gravy at the store and you can serve the meatloaf with mashed potatoes and this mushroom gravy and you will have a wonderful meal.
