Lazy Day Stew

A great recipe for your slow cooker.

With summer approaching, I decided to try out some crockpot recipes. I bought a new crockpot cookbook and it contains over 1,400 recipes. Every recipe is for the crockpot and I love cooking this way for two reasons. The first reason is because it doesn’t make my kitchen hot. The second reason is because I can make it in the morning and let it cook all day. At dinnertime my meal is ready to serve. I tweaked this recipe slightly and it turned out wonderful.


  • 2 lbs. beef stew meat
  • 2 c. diced carrots
  • 2 c. diced potatoes
  • 2 medium onions, chopped
  • 1 c. celery, chopped
  • 10 oz. frozen lima beans
  • 2 tsp. quick-cooking tapioca
  • 1 tsp. salt
  • ½ tsp. pepper
  • ½ tsp. crushed red pepper
  • 2 (8-oz) cans tomato sauce
  • 1 c. water
  • 1 T. brown sugar

Begin by placing the beef stew meat in the bottom of the crockpot. I always coat my crockpot with cooking spray first though because it makes clean-up easier. Add all of the vegetables next and then sprinkle with tapioca, salt, pepper and crushed red pepper. Mix together the water and the cans of tomato sauce and pour on top. Finish off by sprinkling the brown sugar on the top.

Turn the crockpot to low and be sure the cover is on. Let it cook for around eight hours or until it is done. The meat will be really tender and all of the vegetables will be cooked thoroughly. Serve this with bread or rolls and it is the perfect meal the whole family will enjoy.
