Fresh Strawberry Shortcakes

This is a great recipe I tried yesterday and is perfect for fresh strawberries.

I made this recipe yesterday for the first time and it was absolutely delicious. I have friends coming over tonight and I have just enough left to serve this to them. I am very particular about the food I serve guests. It has to be above average in tastes and looks. These are perfect for this.


  • 5 c. fresh strawberries, sliced
  • ½ c. sugar
  • ¼ c. orange juice
  • 3 c. flour
  • ½ c. sugar
  • 1 T. baking powder
  • 1 T. grated orange peel
  • ½ tsp. salt
  • ½ c. cold butter, cubed
  • 1 ½ c. heavy whipping cream
  • 1 egg
  • 1 egg yolk
  • 1 tsp. vanilla
  • Additional sugar and whipping cream for top

To prepare this wonderful recipe, mix the strawberries, sugar and orange juice in a bowl. Set this aside until you are ready to serve them. It is best to place this bowl in the refrigerator.

The next step is to make the shortcakes. These shortcakes will be thick, but that is because when you are ready to serve them, you will slice them in half horizontally.

Mix the flour, sugar, baking powder, orange peel and slat in a bowl. Cut in the butter with a pastry blender until it resembles coarse crumbs.

In a separate bowl, whisk the cream, egg, yolk and vanilla. Add this to the flour mixture and stir until just moistened. Place this on a floured surface and knead 8 to 10 times.

Roll the dough out to 1-inch and cut with a 3-inch scalloped cookie cutter. Place the shortcakes on parchment paper that has been placed on a cookie sheet. Gently brush additional whipping cream on the tops and sprinkle some sugar on them. Bake the shortcakes at 400 degrees for 15 minutes or so, or until they are done.

When they cool, cut each in half horizontally. Scoop some of the strawberry mixture on the bottom half of the shortcake. Replace the top of the shortcake and then top with whip cream. Delicious!
