
When I was a child, dinnertime always included dessert. Lunches usually did, too. When thinking about the desserts I enjoyed as a child, this #1 Favorite came to mind. Peach Custard Cake is not difficult to make, if you follow the instructions. It is likely to become one of your favorites, too.
The ingredients:
one cup of softened margarine (you can use butter if you prefer)
one half teaspoon salt
two cups flour
one teaspoon of cinnamon
one cup of sugar
one 28-ounce can of sliced peaches
two eggs
one 14-ounce can of evaporated milk
How to make the cake:
Mix the first three ingredients together. The mixture will have a crumbly texture.
Press the mixture carefully into the sides and bottom of your baking pan.
Separate the peaches from the juice. Arrange the slices evenly on top of the mixture.
Mix the cinnamon and sugar together. Sprinkle it on top of the peach slices.
Bake this portion of the cake for 20 minutes in a 375-degree oven.
Next, mix the eggs, evaporated milk, and juice together. Pour this mixture on the cake.
Return it to the oven and bake for 30 minutes. This additional baking will allow the custard mixture to set.
An additional note: this Peach Custard Cake can be served warm or cold. It depends on your preference, but is great either way.
Also, some people do not think this cake is sweet enough. If this describes you, you can spray some Reddi-Wip whipped cream on top.
