I just ran across this recipe, for Magic Crust Custard Pie, while browsing one of my favorite cooking sites. I absolutely ADORE custard and immediately added it to my "gotta try" list. Apparently, the flour settles to the bottom and forms the crust, which is similar to a Bisquick "Impossible Pie."
I'm assuming it's pretty tasty. The recipe has received over 400 reviews and/or comments from satisfied (or mostly satisfied) bakers. I plan on making the pie, sometime this weekend. I love the fact that it's so quick and easy.
Magic Crust Custard Pie
- ¼ cup butter or margarine
- 4 eggs
- ¾ c sugar
- pinch of salt
- 2 c milk
- 2 t vanilla
- ½ c flour (all purpose)
Pre-heat oven to 350° F.
Place all ingredients in a blender, in the order listed. Blend for 30-40 seconds. Pour into a buttered 9 inch pie plate.
Sprinkle with nutmeg. (Note: I'm going to try pumpkin pie spice instead.) Bake for 45 minutes or until knife or toothpick inserted in center of pie comes out clean.
Some readers said that the pie reminds them of chess pie. Some suggested using coconut milk instead of whole (or 2 %) milk and adding some coconut. I'm thinking somewhere along the lines of ½ a cup. You can also substitute the vanilla for lemon or almond extract.
Someone else said they added 1 cup of canned pumpkin to the recipe. YUM! Several people said that they got better results when they used a glass pie plate. All of these things should be considered, before you actually whip up this quick and easy dessert. Happy eating!
