Any bananas I have going brown get popped into the freezer until I have enough for banana bread. They come out very mushy when thawed (probably because much like cooking, freezing destroys cell walls of fruit/veg) and the banana bread is moist.

That's a great idea- I love banana bread, so will have to try that. Plus, I just got a new freezer, so I should have lots of room.
